All about Santorini.

Hatzidakis Winery was founded in 1997 by Haridimos and Konstantina Hatzidakis. Konstantina’s family owns vineyards in the village of Pyrgos Kallistis, on the road that leads to the monastery of Prophet Ilias. The land had not been cultivated since 1956, when the earthquake on Santorini forced her parents to leave the island.

After extensive re-planting and nurturing of older vines, they found a cave, which was transformed into a winery. The vineyards sit at 300 metres facing north to north-east. Haridimos, studied Agronomy and Oenology at the Technical School of Wine and Beverages in Athens.

1991-1996: Graduated and carried out internship at J. Boutaris and Sons, where he eventually was head Oenologist at the Santorini winery, whilst being in charge of production at the Fantaxometoho Estate in Crete.

The philosophy of Haridimos is: “to enrich and broaden the grape varieties, as well as to improve the quality of the Santorinian vineyard, which has many secrets to reveal”

In August 1997 he began to operate the winery with the production of Vinsanto and the vinification of the island’s red variety Mavrotragano.

The present.

Winery and vineyards are located within the classified zone of Protected Designation of Origin (PDO) Santorini, especially in the villages Pyrgos Kallistis, Megalochori, Emporio and Akrotiri.

Hatzidakis wines.

We cultivate a total of 10 hectares of vineyards, at an altitude from 70 up to 350 meters, with mainly South or Southeast orientation and with the white varieties of Assyrtiko, Aidani and the red variety Mavrotragano. In all of our vineyards we apply organic farming.

We make up our production from grapes of cooperating winegrowers in order to produce more dry white wines, a red dry, a sweet traditional Vinsanto wine, from sun dried white grapes and a sweet red Voudomato wine from also sundried red grapes of the Voudomato variety.

Based on the contractual agriculture, we have already concluded agreements with growers who also cultivate their vineyards organically and are controlled accordance with the European control system of organic farming. We produce two organic wines from the varieties Aidani (100% Aidani – PGI Cyclades) and Assyrtiko (100% Assyrtiko – PDO Santorini).
