Together with Krasato and Xynomavro, Stavroto is a required ingredient of wines bearing the Rapsani appellation on their label. The ruby-red color of Rapsani wines is attributed to Stavroto as well as its ability to soften the more robust Xynomavro. Even within its native Greece, Stavroto is not widely grown and never appears as a varietal wine. Like Xynomavro, Stavroto is a late ripening variety susceptible to poor weather.
